White Chocolate Pistachio Blondies with Sea Salt

I love to bake blondies, and am always looking for a great recipe. Recently, I was looking through my dessert recipe file and found this one, White Chocolate Pistachio Blondies with Sea Salt. I have no idea where I got this recipe, or whose recipe this is, but it is a good one! Simple to make, and a nice combination of white chocolate, pistachios, and sea salt, all in a buttery soft bar.

White Chocolate Pistachio blondies with Sea salt

Ingredients:

1 cup butter, melted

1 cup brown sugar

1/2 cup granulated sugar

2 eggs + 1 egg yolk

2 tsp. vanilla extract

2 cups all-purpose flour

1/2 tsp. baking soda

1/2 tsp. salt

1 cup white chocolate chunks

3/4 cup pistachios, toasted & chopped

Flaky sea salt, for finishing

Instructions:

Heat oven to 350 degrees F. Line a 9” x 13” pan with parchment.

Whisk melted butter with sugars until smooth. Beat in eggs, yolk, and vanilla.

Stir in flour, baking soda, and salt until just combined.

Fold in white chocolate and pistachios.

Spread evenly in the pan. Bake 28-32 minutes until edges are golden but center is slightly soft.

Sprinkle with flaky sea salt while warm. Cool before cutting.

This is a great fall treat to have with warm Mulled Apple Cider, a Spicy Chai Latte, or a fall tea like Hot Cinnamon Black Tea. Yum!
